The Beijing Breakfast

Jianbing is Beijing’s answer to breakfast. A round griddle on a three-wheeled cart. The vendor spreads mung-bean batter in a thin circle, cracks an egg on top, adds sesame seeds, spreads hoisin and chili sauce, lays in a crispy cracker, and folds the whole thing in 60 seconds. It costs ¥8 to ¥12. Get one between 6:30 and 9:00 AM.

If you want to be adventurous: douzhi (豆汁). A fermented mung bean liquid with a sour, pungent smell. Locals drink it hot with a bowl of pickled vegetables. Non-Beijingers find it challenging. Try a small cup before committing to a bowl.

The Shanghai Breakfast

Shanghai breakfast means xiaolongbao (soup dumplings) or sheng jian bao (pan-fried pork buns). Xiaolongbao are delicate and require a dedicated shop (Jia Jia Tang Bao, Nan Xiang). Sheng jian bao are sold at street stalls and fast-food counters. Pan-fried bottom, soft top, broth inside. Order 4 to 6. Eat standing up. This is correct.

The Wuhan Breakfast

Wuhan’s hot dry noodles (热干面) are the most regional breakfast in China. Thick wheat noodles pre-cooked and mixed with sesame paste, soy sauce, chili, and preserved vegetables. No broth. Served at stalls from 6am to 9am, after which they stop. You eat them standing or at a plastic stool. This is what 11 million people eat for breakfast in Wuhan. It is not to everyone’s taste on first encounter. Try it anyway.

The Xi’an Breakfast
